A croissant sandwich that brings together fluffy scrambled eggs, crispy bacon, and savory Canadian bacon, all harmonized by creamy avocado, fresh spinach, and rich grated Cheddar cheese.
So satisfying and the perfect meal for a weekend brunch or a hearty start to your day!
INGREDIENTS:
- 2 large Cafe Valley Croissants
- 4 Large Eggs
- 4 slices Applewood Smoked Bacon
- 2 slices Canadian Bacon
- 2 cloves Garlic, minced
- 1 ripe Avocado, sliced
- 1 cup Fresh Spinach Leaves
- 1 cup Cheddar cheese, grated
- Salt and Pepper, to taste
- Butter for cooking
Step 1
Preheat a skillet over medium heat and add butter.
Step 2
Cook the bacon in the skillet until crispy, about 5-7 minutes, then remove and drain on paper towels.
Step 3
In the same skillet, add the Canadian bacon and cook for about 2-3 minutes until warmed. Set aside.
Step 4
In a bowl, whisk the eggs with salt and pepper. Pour them into the skillet, stirring gently until scrambled and slightly runny. Remove from heat.

Slice the croissants in half and lightly toast them in the oven or toaster until golden.
Step 6
Assemble each sandwich by starting with the bottom half of the croissant. Layer with scrambled eggs, a slice of Canadian bacon, two slices of crispy bacon, avocado slices, a handful of spinach, and a generous sprinkle of Cheddar cheese.
