Whether served in a cone, a bowl, or straight from the freezer, this homemade blueberry ice cream is a must-try for berry lovers and dessert enthusiasts alike.
INGREDIENTS:
- 2 cups Fresh Organic Blueberries, rinsed and dried
- 1 cup Plain Greek Yogurt
- 1 can Canned Coconut Milk (full fat)
- 1/4 cup Honey or Maple Syrup
- 1 Tablespoon Fresh Lemon Juice
- 1 teaspoon Vanilla Extract
- Pinch of Salt
Step 1
Rinse the blueberries thoroughly. Place 1 1/2 cups of the blueberries into a blender or food processor. Add the lemon juice.
Step 2
Blend the blueberries and lemon juice until completely smooth, creating a blueberry puree.
Step 3
In a medium-sized bowl, combine the blueberry puree, Greek yogurt, honey (or maple syrup), canned coconut milk, vanilla extract, and salt.

Gently fold in remaining 1/2 cup of fresh blueberries. This adds texture to the ice cream.
Step 5
Pour the mixture in a freezer-safe container (a loaf pan or a shallow dish works well.) Cover tightly with plastic wrap, pressing the wrap directly onto the surface of the ice cream to prevent ice crystals from forming.
Step 6
Freeze until solid. Every couple of hours, remove the container from the freezer and stir the ice cream, vigorously with a fork. This helps break up ice crystals and creates a smoother texture. If you forget to do this, don’t worry, it will still taste great.
Step 7
Remove the ice cream from the freezer about 10-15 minutes before serving to allow it to soften slightly. Scoop and enjoy!

Extra Blueberry Flavor – Add 1/2 teaspoon of blueberry extract for a more intense blueberry flavor.
