FOR THE BLACKBERRY CHIA COMPOTE:
- 1 cup Fresh Blackberries
- 2 Tablespoons Water
- 1 Tablespoon Chia Seeds
- 1 Tablespoon Honey or Maple Syrup (optional, adjust to taste)
FOR THE CHIA ALMOND GRANOLA:
- 1 cup Rolled Oats
- 1/2 cup Sliced Almonds
- 2 Tablespoons Honey or Maple Syrup
- 1 Tablespoon Coconut Oil, melted
- 1/4 teaspoon Cinnamon
- Pinch of Salt
FOR THE BLACKBERRY SAUCE:
- 1/2 cup Fresh Blackberries
- 1 Tablespoon Water
- 1 teaspoon Lemon Juice (optional)
- Sweetener, to taste (optional)
FOR PARFAIT ASSEMBLY:
- 1 1/2 cups Greek Yogurt (plain or vanilla)
- Extra Fresh Blackberries, for garnish (optional)
PREPARE THE BLACKBERRY CHIA COMPOTE
Step 1
In a small saucepan, combine the blackberries and water. Cook over medium heat, stirring occasionally, until the blackberries soften and release their juices (about 5-7 minutes). Remove from heat, stir in the chia seeds and honey (if using). Let it sit for at least 15 minutes, or until thickened to a compote consistency. You can mash some of the berries with a fork for a smoother texture.
PREPARING THE GRANOLA
Step 1
Preheat oven to 325ºF (160ºC).

In a medium bowl, combine the rolled oats, sliced almonds, chia seeds, honey (or maple syrup), melted coconut oil, cinnamon, and salt. Mix well to ensure everything is evenly coated. Spread the mixture in a thin layer on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until golden brown and fragrant, stirrring halfway through to prevent burning. Let cool completely on the baking sheet before breaking it into clusters.
CREATING THE BLACKBERRY SAUCE

In a blender or food processor, combine the blackberries, water, and lemon juice (if using). Blend until smooth.

Strain the sauce through a fine-mesh sieve to remove the seeds (optional). Add sweetener to taste, if desired.
