INGREDIENTS:

  • 1lb. Sterling Silver® Beef Ribeye, thinly sliced
  • 1/4 cup Soy Sauce
  • 2 Tablespoon Brown Sugar
  • 1 Tablespoon Sesame Oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1/4 cup Grated Asian Pear
  • 2 Green Onions, thinly sliced
  • 1 Tablespoon Rice Vinegar
  • 1 teaspoon Black Pepper
  • 1 Tablespoon Toasted Sesame Seeds
  • 1 small Onion, thinly sliced
  • 1 Tablespoon Vegetable Oil

DIRECTIONS

Step 1

Wrap the beef in plastic wrap, and place in the freezer for about 20-30 minutes to firm it up. Then, remove from freezer, and unwrap the steak.  Slice across the grain as thinly as possible. Thinner slices will absorb the marinade better and grill more quickly.

Step 2

In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, grated pear, green onions, rice vinegar, and black pepper to make the marinade.

Step 3

Add the sliced beef to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 30 minutes, ideally 1-2 hours (up to 4 hours). Add onions halfway through marinating if you like them soft.

Step 4

Heat a large skillet or grill pan over high heat. Add the marinated beef in. asingle layer; cook for 1-2 minutes per side, or until just browned and cooked through.  Avoid overcrowding; cook in batches if needed.  In the last minute, add the green onions to warm them.

Step 5

Sprinkle with sesame seeds and toss to combine. Adjust seasoning with a little more soy sauce, if needed.

Step 6

Spoon the beef over steamed rice, with lettuce or perilla leaves for wraps.  Serve with kimchi or other banchan on the side.

FLAVOR SUGGESTIONS:

For a deeper flavor, use a combination of soy sauce with a touch of black sesame oil. If you don’t have a grill, you can broil or cook quickly in a hot skillet.
