INGREDIENTS:

  • 2 cups Fresh Plums, pitted and halved
  • 1 cup Granulated Sugar
  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 1/2 cup Cardamom Seeds, lightly crushed
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Pure Vanilla Extract
  • 1 Tablespoon Olive Oil or Melted Butter (for roasting)

DIRECTIONS

Step 1

Preheat oven to 400ºF (200ºC).

Step 2

Toss the halved plums with olive oil or melted butter and half the sugar.

Step 3

Arrange plums cut-side up on a baking sheet lined with parchment paper.

Step 4

Roast in the oven for 20-25 minutes, or until the plums are soft and juicy, and the edges are starting to caramelize.

Step 5

Remove the plums from the oven and let cool to room temperature.

Step 6

In a dry skillet over low heat, lightly toast the cardamom seeds until fragrant, about 1-2 minutes. Crush them finely using a mortar and pestle.

Step 7

In a medium saucepan, combine the roasted plums (with juices), lemon juice, crushed cardamom seeds, and remaining sugar.  Cook over medium heat for 5 minutes to blend flavors.

Step 8

Remove from heat and let the plum mixture cool completely.

Step 9

In a blender or food processor, puree the cooled plum mixture until smooth; strain to remove skins and set aside.

Step 10

In a large bowl, whisk together heavy cream, milk, and vanilla extract until well combined.

Step 11

Stir in the plum and cardamom puree until fully incorporated.

Step 12

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, about 20-25 minutes.

Step 13

Transfer ice cream to an air-tight container and freeze for at least 2 hours to allow it to harden further before serving. Enjoy!

VARIATIONS:

Spice it Up – For. anextra kick, add a pinch of cinnamon or a tiny dash of cayenne pepper to the plum mixture before roasting.

Added Texture – Stir in chopped toasted almonds, pistachios, or crumbled ginger snaps into the ice cream after churning.

*VEGAN OPTION – Swap the heavy cream and milk with coconut cream for a rich decadent option.

NO ICE CREAM MAKER:

Pour the  mixture into a shallow freezer-safe countainer. Freeze for 45 minutes, then remove and stir vigorously with a spatula or whisk. tobreak up ice crystals. Return to freezer and repeat stirring every 30 minutes for 3-4 hours until creamy and firm.
