Bursting with the vibrant flavor of fresh blueberries, this Blueberry Cloud Ice Cream is a light, airy twist on a classic homemade ice cream.

This delightful treat combines the natural sweetness and tartines of ripe blueberries with. avelvety, cloud-like texture that melts in your mouth.

Whipped to perfection and naturally clolored with the berries themselves, it’s a beautiful and refreshing dessert that captures the essence of summer in every bite.

Whether served in a cone, a bowl, or straight from the freezer, this homemade blueberry ice cream is a must-try for berry lovers and dessert enthusiasts alike.

INGREDIENTS:

  • 2 cups Fresh Organic Blueberries, rinsed and dried
  • 1 cup Plain Greek Yogurt
  • 1 can Canned Coconut Milk (full fat)
  • 1/4 cup Honey or Maple Syrup
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Vanilla Extract
  • Pinch of Salt

Step 1

Rinse the blueberries thoroughly. Place 1 1/2 cups of the blueberries into a blender or food processor. Add the lemon juice.

Step 2

Blend the blueberries and lemon juice until completely smooth, creating a blueberry puree.

Step 3

In a medium-sized bowl, combine the blueberry puree, Greek yogurt, honey (or maple syrup), canned coconut milk, vanilla extract, and salt.

Step 4

Gently fold in remaining 1/2 cup of fresh blueberries. This adds texture to the ice cream.

Step 5

Pour the mixture in a freezer-safe container (a loaf pan or a shallow dish works well.) Cover tightly with plastic wrap, pressing the wrap directly onto the surface of the ice cream to prevent ice crystals from forming.

Step 6

Freeze until solid. Every couple of hours, remove the container from the freezer and stir the ice cream, vigorously with a fork.  This helps break up ice crystals and creates a smoother texture. If you forget to do this, don’t worry, it will still taste great.

Step 7

Remove the ice cream from the freezer about 10-15 minutes before serving to allow it to soften slightly. Scoop and enjoy!

OPTIONAL TIPS & VARIATIONS:

Extra Blueberry Flavor – Add 1/2 teaspoon of blueberry extract for a more intense blueberry flavor.

Citrus Zest – Add a pinch of lemon or lime zest for a brighter, more complex flavor.

Mixed Berry Option – Substitute some of the blueberries with raspberries or strawberries for a mixed berry ice cream.

Vegan Option – Ensure your Greek yogurt is plant-based and use maple syrup instead of honey.
