INGREDIENTS:
- 1 pound (approx. 2 cups) Fresh Strawberries, hulled and halved
- 1 cup Full-Fat Coconut Milk (canned, refrigerated overnight, scoop out the thick cream leaving the watery liquid) OR 1 cup Greek Yogurt (for a tangier, lower-fat option)
- 1/4 cup Natural Sweetner (Honey, Maple Syrup or Agave Nectar), adjust to desired sweetness
- 1 Tablespoon Lemon Juice (Brightens the flavor)
- 1 teaspoon Vanilla Extract
- Pinch of Sea Salt
DIRECTIONS
Step 1
In a blender or food processor, combine the strawberries, sweetner, and lemon juice. Blend until completely smooth.
Step 2
Add the coconut cream (or Greek yogurt) and vanilla extract to the strawberry puree. Blend again until everything is well combined and smooth.
Step 3
Pour the mixture into a freezer-safe container (a metal loaf pan works well). Cover tightly with plastic wrap, pressing it directly onto the surface of the ice cream to prevent ice crystals from forming. Freeze for 2 hours.
Step 4
Remove the ice cream from the freezer. It will be partially frozen around the edges. Use a fork or a strong spoon to break up the froen sections and stir everything together vigorously. This is crucial for a creamy texture.
Step 5
Cover the container again and return it to the freezer for another 2-4 hours, or until completely frozen.
Step 6
Let the ice cream sit at room temperature for about 5-10 minutes before scooping to soften slightly. Garnish with fresh strawberry slices. if desired. Enjoy!

For Extra Smoothness: If you have a high-powered blender, you can blend the mixture for a longer period to achieve an even smoother texture.
