About this Recipe
A perfect balance of flavors, this Savory Chicken Broccoli Pasta Salad features tender cubed chicken combined with steamed broccoli, fresh basil, and shaved parmesan for healthy and delicious meal.
FOR THE SALAD:
- 1 box (16oz.) Best Yet® Rotini Pasta
- 1 lb. Boneless, Skinless Chicken Breasts, cubed
- 1 Large Head Broccoli, cut into florets
- 1/2 cup Shaved Parmesan Cheese
- 1/4 cup Fresh Basil Leaves, chopped
FOR THE DRESSING:
- 1/4 cup Extra-Virgin Olive Oil
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Dijon Mustard
- 1 Clove Garlic, minced
- Salt and Pepper, to taste
Step 1
Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions, until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
Step 2
There are several ways to cool the chicken:
POACH – Place chicken breasts in a saucepan, cover with water, bring to a simmer and cook until chicken is cooked through (internal temperature reaches 165ºF or 74ºC). Let cool and cube.
BAKE – Preheat oven to 375ºF (190ºC). Place chicken breasts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 20-25 minutes, or until cooked through. Let cool and cube.
GRILL – Grill chicken breasts over medium heat until cooked through. Let cool and cube.
Step 3
Steam the broccoli florets for 5-7 minutes, or until tender-crisp. You want them to retain a bit of bite! Alternatively, you can blanch them in the same boiling water you used for the pasta for about 2 minutes, then immediately plunge them into an ice bath to stop the cooking.
Step 4
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Taste and adjust seasonings as needed.
Step 5
In a large bowl, combine the cooked pasta, cubed chicken, steamed broccoli, shaved Parmesan cheese, and chopped basil.
Step 6
Pour the dressing over the salad and toss gently to coat all ingredients evenly.
Step 7
For best flavor, cover and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together. This is even better made a few hours ahead of time.
ROYAL NOTES:
Add cherry tomatoes, bell peppers, Kalamata olives, or sun-dried tomatoes for extra flavor and color.
PROTEIN POWER:
You can substitute grilled shrimp, chickpeas, or tofu for the chicken.
CHEESE PLEASE:
Feel free to use a different type of cheese, such as feta or mozzarella.
DRESSING OPTIONS:
If you’re not a fan of lemon vinaigrette, try a creamy Italian dressing or. apesto vinaigrette.
